How to Cook Quail Eggs: Times, Techniques and Serving Ideas

Quail eggs cook fast: about 2 minutes for a soft boil with a runny yolk, and 3½–4 minutes for hard-boiled. Lower them gently into already-boiling water, then move them straight to cold water so they don't overcook.

Boiling quail eggs, step by step

  1. Bring a small pan of water to a rolling boil.
  2. Lower the eggs in gently with a spoon — straight from the fridge is fine.
  3. Time it: 2 minutes soft, 3 minutes jammy, 4 minutes hard.
  4. Lift into a bowl of cold water for a minute or two before peeling.

To peel, roll each egg gently under your palm to crackle the shell, then peel from the fat end where the air pocket sits — shell and membrane come away together.

Frying and poaching

A fried quail egg needs well under a minute in a hot, oiled pan — crack each egg into a small cup first (nick the pointed end with a serrated knife rather than tapping). They make perfect toppers for burgers, hash and canapé blinis. Poaching works too: use barely-simmering water and give them 60–90 seconds.

  • Pickled quail eggs — hard-boil, peel and cover with hot spiced vinegar; keep refrigerated and they're a brilliant bar snack.
  • Mini Scotch eggs — a soft-boiled quail egg wrapped in sausage meat makes the ultimate picnic bite.
  • Salads and grazing boards — halved, they turn a simple salad into something special.
  • Ramen and noodle bowls — marinate jammy eggs in soy, mirin and a little garlic.
  • Simply poached on toast — three or four little eggs, good butter, flaky salt. Done.

A note on freshness

Very fresh eggs are harder to peel when boiled — if you're pickling, eggs a few days old actually peel more cleanly, so plan your batch accordingly. Every box of our table eggs is date-marked at collection, which takes the guesswork out.
